This dark style lager was first brewed in Munich Germany over 150 years ago. Our version is slightly dark in color, but don’t be afraid, the Pious Monk Dunkel is the perfect example that not all darker beers are strong! The body is suprisingly mellow and the alcohol content is low. It has a wonderful clean and roasty aroma and finishes crisp and clean as a lager should. -

Although a Quadruple Ale is a relatively new style, it is based on the idea of the next logical step from Dubbel to a Trippel and then — a Quad. There are plenty of explanations about the origins of these names like double fermented (which makes no sense) or triple the alcohol (makes more sense) or quadruple malt (might be on the right track). Regardless, the style follows this progression: a Trippel is bigger and stronger than a Dubbel, therefore a Quad should be bigger and stronger than a Trippel. Additionally, the flavor profile is different style by style.A Belgian “single” can pretty much be anything, but often are light or pale in color (re: Belgian Pale Ale). A Dubbel is usually made with some roasted malts and dark cara-malts making it darker in color. A Trippel is usually very light in color (like the narrowly exampled “single”) and high in alcohol. So lets consider a Quad to be a Double Dubbel – ours with the added twist of a generous addition of (real) red tart cherries. The color is amber with some red hues and it also holds a nice rich head. The aroma will be distinctively Belgian in character. You will notice lots of fruit like esters and some roasted malt undertones. The body is full with bread-like maltiness and a bit of a lingering caramel sweetness. As the beer finishes you will get a slight balancing bitterness and then an alcohol warming effect.

A Belgian Trippel is a very special type of beer. The first example of a Belgian Trippel was brewed by the Trappist monastery of Westmalle. It is known as Westmalle Trippel. The name, as commonly believed, is a comparison to the single strength “simple” beer. A Trippel represents three times the fermentable extract of the “simple” ale. A Belgian Trippel could be called the beer version of a Champagne. It is very light in color and highly carbonated giving an appearance similar to Champagne. This recipe was first created to commemorate the coming of the new millennium. It was so good, we kept doing it. You may notice some unique aromas from the Millennium Trippel. Some of the most notable aromas characteristic of this style of beer are from esters which are produced by the yeast. Esters typically have fruit-like aromas. They are quite evident in this beer. The flavor is somewhat sweet and malty as well as strong. Since the hop profile is typically low in this style, the flavor emphasis is on the malt and alcohol. The alcohol content is quite high which amplifies certain flavors and creates warming effect in your chest as you drink it.
